Main Course:

Herb & Horseradish-Crusted Beef Tenderloin

Baked Brie with Cranberry Orange Conserves for a starter, followed by Portobello Bisque soup

Served with sides of Maple-Glazed Carrots, Pastry-Wrapped Asparagus, Potatoes Au Gratin and Parker House Rolls.

For dessert, enjoy Eggnog Cheesecake made with a chocolate cookie crust.

Grilled chicken breast or tilapia filet marinated in fresh herbs and lemons. Served with a trio of delicious sauces:

  • Mango Chutney
  • Pineapple Cilantro Salsa
  • Cream Chipotle Lime Sauce

Served with a side of Cilantro Lime Rice, Charro black beans and our fresh in house sopapillas with agave butter

Main Course:

Doro Wat, Sega Tips, Masir & Alicha

Doro Wat chicken slow cooked in a red curry sauce served on a bed of steamed rice, (sega tips) beef tips, bell peppers, and onions pan seared in a berebre sauce, (masir) red lentils slow cooked with berebre, onions and garlic, (Alicha) crisped potato and vegetable medley,  all of these served with a side of Ethiopian Injera bread

These special dining events offer our guests the opportunity to enjoy a unique dining experience where as much of the ingredients as possible are provided directly from local growers and providers.

This is an effort to support a more local, sustainable food industry, while at the same time showing our guests that it is possible to provide a high quality dinner made from locally sourced and organically grown ingredients.

Menu cuisines range from Mediterranean to Italian to Traditional Southern.

The 5-course meal could begin with a starter such as Havarti sun-dried tomato cheese wedges and move on to a soup or salad, then into the finest main courses that Waco has to offer such as Garlic and Herb-stuffed Lamb Roast with Bacon-wrapped Asparagus and Twice Baked Cream Potatoes with Artisan Oven’s pull-apart herbed bread.

The finale is our fresh-made custom desserts such as Creme Bruleé with fresh berries or Chocolate-swirled tulip bowl filled with Raspberry Mousse.
